    Standardizing a Popular Dish & Turning It Into a Restaurant

    Building up brand new restaurants is one of my favorite things to do! I thrive on the challenge of new and big projects (and had a lot of fun taking Nong’s Khao Man Gai from a cart to a brick and mortar).

    Expansion of a Current Brand

    Broder Söder & Broder Nord, Portland, OR

    In 2015, I helped bring the popular Broder brunch concept to the Southwest Portland area, with a new Scandinavian restaurant called Söder. In 2021, I also helped with the expansion of Broder Nord at N. Mississippi ave.

    Design and build edible landscapes

    Clark College Vancouver, WA

    In 2022. I received a grant to design, revitalize, and build a sustainable culinary school garden. As of 2025, we've garndered local support to expand the garden and we're focusing on building the soil structure and planting NW native pollinators. To date, we have 13 fruit trees, over 100 berries, a variety of specialty tea herbs, an expansive selection of perrenial/annual herbs, rotating row crops and 300sqft of composting.

    James Sonny DeMartini

    Currently based in Portland, Oregon

    I'm a professionally-trained chef with over 22 years of experience and a passion for sharing my craft and teaching others how to create easy-to-make, nourishing, delicious meals using local and seasonally-available ingredients.

    I’ve been fortunate to have mentored under some great chefs from the French Laundry, Charlie Trotters, and Marco Pierre White. I know fine-dining in and out, and also how to work with high-quality ingredients in the most cost-effective way. In between gigs, I worked the lands on a few organic farms in Illinois, Costa Rica, and Thailand, and taught classes on simple techniques for home chefs.

    Teaching is my real passion -- I got into the culinary world wanting to learn a skill that allowed me to connect people on a regular basis. There's nothing better in life than a hot, delicious (and nutritious!) meal shared with good company. Now I spend much of my time teaching others how to do the same!

    When I'm not teaching, I'm helping restaurant businesses grow their empire and working on side projects for unique food products.

    I thrive on creative projects both in and out of the kitchen -- so let's chat about what I can do for you!
